For Ella's birthday I made cupcakes. I know, you say, 'ho hum big deal'. However Betty's (Crocker) stuff is expensive here. That box of white cake mix is about $10 here. $10 outrageous dollars!!! I don't care if it saves me an hour or two or a whole day, I stupidly, crazily refuse to pay $10 for what I know I can get for sometimes $.99 at HEB in the US. So, thank you Martha Stewart for being anal and creating a cupcake recipe. I probably spent more on the homemade cake too with my $6 organic flour, $3 New Zealand butter, and my $4 Japanese/organic/DHA eggs but there is something unlawful about paying $10 for a box of cake mix. I did wuss out and buy the $4 pre-made can icing which probably negated everything I saved but homemade icing was not worth the effort to me . . . at least for kids. Adults . . . maybe.
Speaking of baking/cooking. Our school here has an International Day. It's a big deal at the school for some reason and each class represents a country (whatever they choose). International day is a half day of school - or really rather like 3 hrs. From what I've seen, it's like putting on a wedding. All this hoopla for 3 crazy hours and then it's all over. I signed up to make 100 servings of bruschetta and 100-200 servings of a cucumber dip that represents Egypt. Holy smokes. 100 servings!!! What did I get myself into??
